Here is a way to serve vegetables that will please every taste.
Some Food For Thought For Fat/Calorie Slashers:
- Bake instead of fry. See above for Baked and Seasoned Tortilla Chips and Water Crisp Corn Tortilla Chips.
- Barbecue or grill-cook instead of pan-frying pieces of meat, fish or poultry.
- Braise-deglaze chopped vegetables that are usually cooked in fat, as the foundation of many dishes. Pan braising and then deglazing with water of broth/stock develops a rich brown colour, and sweet, intense vegetable flavours.
- Broil instead of pan-fry to brown meats, fish, and poultry.
- Broil to char and cook chilies and other vegetables.
- Use broth instead of fat to give a creamy texture to refried beans and other dishes.
