DIEGO’S QUICK N EASY TORTILLA CASSEROLES
15 minutes and they are ready to pop in the oven
DURING THE BUSY CHRISTMAS SEASON, MAKE THESE AHEAD & FREEZE.
THEN JUST ‘POP OUT’ AS NEEDED FOR A QUICK N EASY MEAL.

Ingredients:
nonstick spray coating
6 DIEGO’S WHITE CORN TORTILLAS cut into 4 wedges

2 cups cubed cooked chicken
1 cup loose-pack frozen whole kernel corn
1 cup of your favourite red or green salsa (see basic salsa recipe)Click to enlarge
3 tablespoons light dairy sour cream
3 tablespoons snipped fresh coriander 
1 tablespoon all-purpose flour
1 cup crumbled soft feta cheese (about 180gm)
Light dairy sour cream (optional)
Snipped fresh coriander (optional)
Chopped tomato (optional)
Jalapeno pepper, seeded and diced (optional)

Preparation:

FOUR INDIVIDUAL CASSEROLES:
1.  Spray four baking dishes about 300 ml in size with nonstick coating.

2.  Place 3 tortilla wedges in the bottom of each of the oven proof dishes.

3.  Place remaining tortilla pieces on a baking sheet and spray with oil for a better taste and finish.

4.  Bake in a 180c oven about 10 minutes or until crisp and golden.

5.  Meanwhile, combine chicken, corn, salsa, the 3 tablespoons sour cream, cilantro, and flour.

6.  Divide mixture among dishes making sure the tortilla wedges are well covered.

7.  Bake, uncovered, in a 180c oven for 20 minutes.

8.  Arrange baked tortilla pieces atop casseroles.

9.  Top with cheese.

10.  Bake for 5 to 10 minutes more or until heated through.

11.  Garnish with additional sour cream, jalapeno slices, cilantro, and tomato.

Makes 4 servings.


To bake frozen casseroles

1.  Bake, covered, in a 180c oven for 25 minutes.

2.  Uncover, bake about 20 minutes more or until heated through.

3.  Top with tortilla pieces and cheese.

4.  Bake for 5 to 10 minutes more or until heated through.

5.  Garnish as above.

NOTE: Small aluminum throw-away containers can be used.


Microwave-cook frozen casseroles:

1.  Cover microwave-safe casseroles with waxed paper; micro-cook on 30% power, allowing 4 minutes for 1 casserole and 5 minutes for 2 casseroles.

2.  Continue cooking, covered, on 100% power until heated through, allowing 2 to 4 minutes for 1 casserole or 3 to 6 minutes for 2 casseroles, rotating the dishes once.

3.  Top with the baked tortilla pieces and cheese; micro-cook, uncovered, about 30 seconds more or until cheese is melted.

4.  Garnish as above.

NOTE: Plastic microwave-safe containers can be used.


Make-Ahead Tip:

Assemble casseroles as directed above, except do not top with baked tortilla pieces; place baked pieces in a moisture- and vapor-proof plastic bag.

Freeze casseroles and tortilla pieces up to 1 month.
