Vegetarian Tortilla Tacos

Incredibly Easy * Incredibly Delicious, Even meat lovers will enjoy these!!!


 
Ingredients:

10 to 12 DIEGO'S White Corn Tortillas
1 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, chopped
1 green capsicum, seeded and chopped
1 red capsicum, seeded and chopped
2 cups sliced mushrooms
1 small jalapeno pepper, seeded, finely chopped *
2 large firm Roma tomatoes, chopped
2 cups canned borlotti beans, drained, rinsed
2/3 cup vegetable stock
3 cups chopped fresh spinach
salt and pepper to taste
1/2 teaspoon chilli powder
1 tablespoon cumin

Optional, red leaf lettuce


Preparation:

Heat olive oil in a large sauté pan over medium-high heat. Add onion, garlic, peppers, mushrooms and tomato. Sauté 5 minutes. Add spices and sauté another 2 minutes. Add vegetable stock and simmer for an additional 5 minutes. Reduce heat, add beans to heat through. Add the spinach and stir until just wilted. Heat tortillas according to package directions. Line each tortilla with red leaf lettuce for added eye apeal and flavour.  Fill each tortilla with a half cup of filling roll up tortilla, enjoy.


Other Notes: *Wash hands immediately after handling Jalapenos.
Here are a few substitutions, for a little variety: Zucchini, carrots, cabbage, grated tasty cheese, feta cheese, use your imagination.
